
“Easy
to make, tasty fruit salsa and cinnamon tortilla chips. Great as an
appetizer or a snack. Great for anytime!”
Ingredients:
2 kiwis or peaches, peeled and diced
2 golden delicious apples, peeled, cored, and diced
8 oz. raspberries, fresh or frozen
2 Tbsp. sugar
3 Tbsp. fruit preserves, any flavor
10 10-inch flour tortillas
Butter flavored cooking spray
¼ cup cinnamon sugar, see “Tips” for instructions
1. Wash fruit. In a large bowl, mix kiwis, apples, raspberries,
strawberries, sugar, and fruit preserves. Cover and chill.
2. Preheat oven to 350 degrees.
3. Coat one side of each tortilla with butter-flavored cooking
spray. Cut each tortilla into wedges and arrange in a single layer
on a large baking sheet. Sprinkle wedges with desired amount of
cinnamon sugar. Spray again with cooking spray.
4. Bake in preheated oven 8 to 10 minutes. Repeat with any remaining
tortilla wedges. Allow to cool about 15 minutes.
5. Serve with chilled fruit mixture.
Tips
To make cinnamon sugar, mix ¼ - ½ tsp. cinnamon with ¼ cup sugar.
When you don’t have these fruits on-hand, use any combination of
fruits you like.
